Salad burnet

 

 

Salad burnet (Sanguisorba) is a versatile and hardy perennial herb from the Rosaceae family, flourishing on limestone soils. This wild native plant is cherished for its unique flavor that combines the nutty essence of hazelnuts with the refreshing taste of cucumbers. Its culinary uses are diverse; the fresh leaves can be eaten raw in salads, blended into a pesto, or mixed with cottage cheese. Salad burnet also enhances the flavor of fish or pasta dishes and is a key ingredient in the traditional Frankfurt green sauce (Frankfurter Grüne Sauce).

 

Beyond its culinary appeal, salad burnet has notable medicinal properties. It is known for its haemostatic abilities, capable of stopping or slowing bleeding. Fresh leaves can be consumed for their health benefits, while a decoction of the roots may be used as a remedy for diarrhoea or applied topically to treat wounds and sunburn. This makes salad burnet not only a delightful addition to the kitchen but also a valuable plant for natural healing practices.

From Friday 16 to Monday 19 June daily from 5 pm, the wineries from the premium wine village of Randersacker invite you to enjoy and celebrate.

In the wonderfully illuminated town hall courtyard, there will be great wines, varied cuisine, top bands and a great atmosphere.
